  • 1 cup granulated sugar
  • 1¼ cups canned pumpkin puree
  • ½ cup canola oil
  • 2 large eggs
  • 1¼ teaspoons maple extract
  • ½ cup finely chopped pecans or walnuts
  • 3 tablespoons brown sugar
  • ¼ cup all-purpose flour
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 tablespoons unsalted butter (melted)
  • 1½ teaspoons pumpkin pie spice
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ cup milk
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ¼ teaspoon maple extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the chopped pecans or walnuts, brown sugar, all-purpose flour, ground cinnamon, salt, and melted butter. Mix until crumbly and set aside.
  3. In another bowl, whisk together the all-purpose flour, pumpkin pie spice, cinnamon, baking soda, baking powder, and salt until well combined.
  4. In a large mixing bowl, beat together the eggs and granulated sugar until light. Add in the canola oil, pumpkin puree, milk, and maple extract. Mix well until smooth.
  5. Gradually add the dry mixture to the wet mixture. Stir gently with a rubber spatula until just combined. Be careful not to overmix; small lumps are okay.
  6. Pour half of the batter into a greased loaf pan. Sprinkle half of the nut topping over it. Pour in the remaining batter and top with the rest of the nut mixture.
  7. Bake in your preheated oven for about 50 minutes or until a toothpick inserted into the center comes out clean.
  8. Let your Maple Pumpkin Bread cool in the pan for about 10 minutes before transferring it to a wire rack. Prepare your glaze by whisking together powdered sugar with milk and maple extract until smooth. Drizzle over cooled bread if desired.
