  • 1 can (15 oz) white (cannellini) beans (drained & rinsed)
  • 2 mini cucumbers (chopped)
  • 10 oz cherry tomatoes (halved)
  • 1/2 red bell pepper (chopped)
  • 1/3 cup Kalamata olives (pitted & chopped)
  • 1/2 cup crumbled feta cheese
  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • Salt & pepper (to taste)

Instructions

  1. Wash and chop all vegetables: cucumbers, tomatoes, bell pepper, and red onion.
  2. In a large salad bowl, combine the drained white beans with the chopped veggies and olives.
  3. Add crumbled feta cheese and dried oregano.
  4. Drizzle with olive oil and apple cider vinegar; season with salt and pepper to taste.
  5. Toss gently until well combined. Serve immediately or let chill for at least 30 minutes to enhance flavors.
