  • 1 1/4 cups unsalted butter, softened

  • 1 large egg yolk
  • 28 ounces sweetened condensed milk
  • 6 ounces dark chocolate (60% cacao), coarsely chopped
  • 1 teaspoon light corn syrup
  • Sea salt for garnish

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, cream together butter and sugar until light and fluffy. Gradually add flour and salt, then mix in the egg yolk.
  3. Press the mixture evenly into the bottom of the prepared pan. Bake for about 20 minutes until lightly golden. Let cool.
  4. In a saucepan over medium heat, combine sweetened condensed milk, dark chocolate, corn syrup, and butter. Stir until melted and smooth.
  5. Pour caramel over cooled shortbread layer, spreading evenly. Chill in the refrigerator for at least one hour until set.
  6. Cut into bars, sprinkle with sea salt, and serve.
