  • 16 graham crackers
  • 1/2 cup toasted pecans
  • 4 tbsp unsalted butter
  • 1 cup sugar
  • 1 pound cream cheese
  • 2 large eggs
  • 1/3 cup sour cream
  • Vanilla extract

Instructions

  1. Preheat oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. In a bowl, crush the graham crackers, then mix with toasted pecans, melted butter, sugar, and cinnamon. Press firmly into the bottom of each muffin cup.
  3. In another bowl, beat room temperature cream cheese until smooth. Gradually add sugar, salt, and vanilla extract; mix in eggs one at a time followed by sour cream.
  4. Pour filling over crusts and bake for about 18 minutes until slightly wobbly in the center.
  5. Chill in the refrigerator for at least 2 hours before serving.
