  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup all-purpose flour
  • 3 cups chicken stock
  • 1 cup whole milk
  • 1 tablespoon Dijon mustard
  • 16 ounces fresh potato gnocchi
  • 2 1/2 cups cooked chicken (torn into pieces)
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large deep skillet, melt the butter over medium heat. Add carrots, celery, onion, and salt; cook until softened, about 6–8 minutes.

  4. Gradually whisk in chicken stock and milk until smooth. Add Dijon mustard and seasonings.
  5. Bring the mixture to a gentle simmer and add gnocchi; cook uncovered for about 4–5 minutes.
  6. Stir in cooked chicken and sweet peas; simmer until heated through, around 3–4 minutes.
