  • ¾ cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • ¼ cup sour cream (room temperature)
  • 1 tablespoon vanilla extract
  • 2 cups ripe peaches (peeled, pitted, and sliced)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.

  3. In a large bowl, cream softened butter until creamy. Gradually add sugar and beat until light and fluffy. Add eggs one at a time along with sour cream and vanilla extract.
  4. Combine dry ingredients with wet ingredients on low speed until just mixed. Gently fold in three-quarters of the peach slices.
  5. Pour batter into prepared pan, top with remaining peaches, and sprinkle with sugar if desired.
  6. Bake for about 45 minutes or until a toothpick comes out clean. Allow cooling for at least 30 minutes before serving.
