  • 1 lb ground chicken or turkey
  • 4 tablespoons soy sauce
  • 3 tablespoons oyster sauce
  • 6 ounces rice noodles
  • 12 leaves of lettuce (Boston or your choice)
  • ½ cup lightly salted peanuts, chopped
  • Fresh herbs like cilantro and green onions for garnish

Instructions

  1. In a mixing bowl, whisk together soy sauce, oyster sauce, water, sambal oelek, honey, ginger paste, lime juice, minced garlic, green onions, rice vinegar, and cornstarch.
  2. Pour ¾ of the sauce over the ground chicken and chopped peanuts; mix well and let marinate for at least 15 minutes.
  3. Soak rice noodles in warm water until softened; drain and cut into smaller pieces.
  4. Heat sesame oil in a skillet over medium heat; add marinated chicken mixture and cook until fully cooked (about 10 minutes). Stir in soaked noodles for another 5 minutes.
  5. Spoon the mixture into lettuce leaves; garnish with cilantro and drizzle with remaining sauce before serving.
