  • 2 boneless skinless chicken breasts (cooked and diced)
  • 1 package colored rotini pasta (12 oz)
  • 1 broccoli (chopped into florets)
  • ½ cup cherry tomatoes (halved)
  • 5 tbsp fresh basil (chopped)
  • 6 tbsp pesto
  • 12 black olives (pitted)
  • ½ tsp salt
  • ¼ tsp pepper
  • For garnish: 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Cook the rotini pasta according to the package directions. Add the chopped broccoli during the last 4 minutes of cooking. Drain using a colander.
  2. In a large mixing bowl, combine the drained pasta and broccoli with diced chicken, halved cherry tomatoes, chopped basil, black olives, pesto, salt, and pepper. Stir until well mixed.
  3. Cover the bowl with plastic wrap or a lid and refrigerate until ready to serve. This allows the flavors to meld beautifully.
