  • 4 slices fresh pineapple
  • 3 tablespoons hoisin sauce
  • 2 teaspoons grated fresh ginger
  • 1 garlic clove, minced
  • 1 teaspoon Dijon mustard
  • pounds beef tenderloin
  • Salt and pepper to taste
  • 2 tablespoons pineapple juice
  • 1 teaspoon soy sauce
  • Fresh parsley for garnish

Instructions

  1. In a mixing bowl, combine hoisin sauce, ginger, minced garlic, Dijon mustard, pineapple juice, soy sauce, salt, and pepper.
  2. Place beef tenderloin in a shallow dish and pour half of the marinade over it. Cover and refrigerate for at least 15 minutes.
  3. Preheat broiler and arrange pineapple slices on a broiler pan. Brush with hoisin sauce.
  4. Broil pineapple slices for about 5 minutes on each side until caramelized.
  5. Preheat grill to medium-high heat. Remove beef from marinade; season with salt and pepper.
  6. Grill beef for about 6–8 minutes per side or until desired doneness is reached.
  7. Let the beef rest for a few minutes before slicing, then serve with broiled pineapple.
