  • 4 pounds boneless beef shoulder
  • 1 large yellow onion
  • 1 can ginger beer/ale
  • 12 cups BBQ sauce
  • 1 pound elbow macaroni
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • 2 cups whole milk
  • 4 cups shredded sharp cheddar cheese
  • Fresh parsley (for garnish)

Instructions

  1. Cook the Pulled Beef: In a slow cooker, layer sliced onions then add beef shoulder, ginger beer/ale, and BBQ sauce. Cook on low for 6–8 hours.
  2. Prepare Macaroni: Boil elbow macaroni until al dente, drain and set aside.
  3. Make Cheese Sauce: Melt butter in a saucepan, stir in flour to create a roux, gradually whisk in warmed milk until thickened. Mix in shredded cheddar until melted.
  4. Combine: Shred the cooked beef and mix with remaining BBQ sauce. Combine macaroni with cheese sauce and fold in shredded beef.
  5. Optional Bake: Transfer to a baking dish and bake at 350°F for about 20 minutes until bubbly.
