  • 1 cup pumpkin puree
  • 1/2 cup softened unsalted butter
  • 1/2 cup warm milk
  • 2 large eggs
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp nutmeg
  • 1/4 tsp kosher salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your loaf or round cake pan by greasing and flouring it.
  2. In one bowl, whisk together all-purpose flour, ground cinnamon, nutmeg, baking powder, baking soda, and kosher salt.
  3. In another bowl, cream together softened unsalted butter and granulated sugar until fluffy. Add eggs one at a time until fully incorporated.
  4. Mix in pumpkin puree and vanilla extract until smooth.
  5. Gradually fold the dry ingredients into the wet mixture until just combined. Then stir in warm milk until smooth.
  6. Pour the batter into the prepared pan and bake for about 45–55 minutes (depending on pan type) or until a toothpick comes out clean.
  7. Let cool in the pan for about 15 minutes before transferring to a plate to cool completely before slicing.
