2 eggs
1 cup canned pumpkin puree
½ cup white granulated sugar
½ cup light brown sugar (packed)
½ cup vegetable oil
1 cup chocolate chips
Instructions
Preheat your oven to 350°F (175°C). Prepare a muffin tin by greasing it or lining with muffin liners.
In a mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg until well combined.
In another bowl, mix eggs, pumpkin puree, granulated sugar, brown sugar, and vegetable oil until just blended.
Gently fold dry ingredients into wet ingredients until combined; do not overmix.
Fold in chocolate chips evenly throughout the batter.
Scoop batter into muffin tins and bake for about 16 minutes or until a toothpick inserted comes out clean. Allow to cool for about 3 minutes before transferring to a wire rack.
