  • 1/4 cup + 1 tablespoon milk (room temperature)
  • 1/4 cup unsalted butter (melted and cooled)
  • 2 teaspoons pure vanilla extract
  • 1/2 cup granulated sugar (for topping)
  • 1/2 cup brown sugar
  • 1/4 teaspoon ground cinnamon (for topping)
  • 1/3 cup pecans (chopped)
  • 1 1/2 cups hot water
  • Optional: Vanilla ice cream, heavy cream, or whipped cream for serving

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 2-quart casserole dish.
  2. In a mixing bowl, sift together the all-purpose flour, whole wheat pastry flour, baking powder, salt, granulated sugar, and spices.
  3. In another bowl, mix pumpkin puree, milk, melted butter, and vanilla extract until smooth.
  4. Combine wet and dry ingredients gently; pour into the prepared dish.
  5. Mix granulated sugar, brown sugar, and cinnamon in a small bowl; add chopped pecans and sprinkle over the batter.
  6. Carefully pour hot water over the topping without stirring.
  7. Bake for about 40 minutes until set; cool for 5 minutes before serving.
