Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until translucent (3-4 minutes). Stir in garlic, celery, and carrot; cook for another 5 minutes until softened.
  2. Pour in vegetable broth and bring to a gentle boil. Add rinsed quinoa; reduce heat to low and simmer for about 15 minutes.
  3. Stir in corn kernels and coconut milk along with smoked paprika, dried thyme, salt, and pepper. Simmer on low for an additional 5-10 minutes.
