  • 2 leeks, chopped
  • 2 large carrots, sliced
  • 6 cups chicken broth
  • 2 pounds potatoes, peeled and diced
  • 1 pound fresh mushrooms, sliced
  • 1 cup half-and-half
  • ¼ cup all-purpose flour
  • Fresh dill for garnish

Instructions

  1. Melt 3 tablespoons of butter in a large saucepan over medium heat. Sauté chopped leeks and sliced carrots for about 5 minutes until softened.
  2. Pour in the chicken broth and season with dried dill, salt, black pepper, and bay leaf.
  3. Add diced potatoes and cover; cook for 20 minutes until tender but firm. Remove the bay leaf.
  4. In a skillet, melt the remaining butter and sauté sliced mushrooms for about 5 minutes until browned. Stir into the soup mixture.
  5. In a small bowl, mix half-and-half with flour until smooth; stir into the soup to thicken.
  6. Serve hot, garnished with fresh dill.
