Ingredients

Scale
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 (3.4 oz) box strawberry instant pudding mix (dry)
  • 1 cup crushed Golden Oreos (for topping)
  • ½ cup crushed freeze-dried strawberries or strawberry cereal (for topping)
  • 2 tablespoons melted butter (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract, then mix in the dry pudding mix until well combined.
  3. In another bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add this mixture to the wet ingredients until a soft dough forms.
  4. For the topping, combine crushed Golden Oreos, crushed freeze-dried strawberries or cereal, and melted butter in a small bowl until crumbly.
  5. Scoop dough into balls about 1.5 inches in size; roll each ball in the crunch topping mixture and press gently to adhere.
  6. Place cookie balls on the prepared baking sheet about 2 inches apart and bake for 10–12 minutes until edges are lightly golden brown. Cool on the pan for about 5 minutes before transferring to a wire rack.
