  • 1½ cups granulated sugar

  • Zest of 1 large lemon
  • ½ cup cold unsalted butter, cubed
  • 3 large eggs, slightly beaten
  • 4 cups fresh strawberries, halved
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper.
  2. In a stand mixer, combine the flour, sugar, salt, and lemon zest on low speed.
  3. Add cold butter cubes and mix until pea-sized crumbs form.
  4. Incorporate the slightly beaten eggs until a crumbly dough forms.
  5. Press ⅔ of the dough into the prepared baking dish and set aside the rest for topping.
  6. In a bowl, mix strawberries with lemon juice, cornstarch, and sugar until well combined.
  7. Pour strawberry mixture over the crust and spread evenly.
  8. Crumble remaining dough over the filling.
  9. Bake for 45-50 minutes until golden brown on top.
  10. Allow to cool completely before cutting into bars.
