Ingredients

Scale
  • 4 medium ripe peaches
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter (room temperature)
  • 1 cup sugar
  • 1 large egg
  • 1/2 cup buttermilk
  • 2 teaspoons pure vanilla extract
  • 1 tablespoon sparkling sugar (for topping)

Instructions

  1. Prepare peaches by peeling and slicing them into eight equal slices. Set aside on a paper towel-lined plate to absorb moisture.
  2. Preheat your oven to 350°F and butter a 9" deep-dish pie plate generously.
  3. In a medium bowl, whisk together the flour, baking powder, and salt; set aside.
  4. In a large bowl, cream the butter until smooth using an electric mixer. Gradually add sugar and beat until light and fluffy.
  5. Mix in the egg, buttermilk, and vanilla at low speed until combined. Gradually incorporate the flour mixture until just combined.
  6. Pour batter into the prepared pie plate and smooth the top. Arrange peach slices on top and sprinkle with sparkling sugar.
  7. Bake for 10 minutes at 350°F, then reduce temperature to 325°F and bake for an additional 50 to 60 minutes or until a toothpick comes out clean.
  8. Allow cooling before slicing and serving.
