  • 1/2 cup sweet chili sauce
  • 1 lime
  • 4 chicken breasts (about 2 lbs)
  • 8 cups cauliflower rice

  1. In a large Ziplock bag, mix 1/2 cup coconut milk, sweet chili sauce, and juice from half a lime. Season with salt and pepper.
  2. Add chicken breasts to the bag, seal it, and marinate for 30 minutes to 1 hour.
  3. Preheat the grill on medium-high heat and grease the grates.
  4. Grill chicken for 4-5 minutes per side until fully cooked (internal temperature should reach 165°F). Let rest for 5 minutes.
  5. Meanwhile, heat coconut oil in a skillet over medium heat. Sauté cauliflower rice with salt and pepper until tender (5-7 minutes). Stir in remaining lime juice and coconut milk; mix in chopped cilantro.
  6. Serve grilled chicken atop cauliflower rice with extra sweet chili sauce on the side.
