  • 2 tablespoons sugar
  • 1 cup unsalted butter (cold)
  • 1/4 cup ice water
  • 1/4 cup lemon juice (cold)
  • 1 lb sweet potatoes (about 2 medium)
  • 5 tablespoons unsalted butter (softened)
  • 1 cup dark brown sugar
  • 3 large eggs
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 teaspoon salt
  • 1 1/4 cup evaporated milk
  • 1 tablespoon vanilla extract
  • 1 egg
  • 1 tablespoon milk
  • whipped cream

Instructions

  1. Preheat the oven to 400°F (200°C). Wash and peel sweet potatoes; cut into cubes and boil in salted water until tender, about 15–20 minutes. Drain and cool.
  2. For the crust, combine flour, salt, and sugar in a mixing bowl. Cut in cold butter until crumbly. Gradually add ice water and lemon juice until dough comes together. Shape into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. Mash cooled sweet potatoes in a bowl. Add softened butter, dark brown sugar, eggs, spices, salt, evaporated milk, and vanilla; mix well.
  4. Roll out chilled dough and fit into a pie dish. Pour sweet potato filling into the crust.
  5. Bake at 350°F (175°C) for about 90 minutes or until set; let cool before slicing.
