  • 3 ears of corn (kernels removed)
  • 3 poblano peppers (thinly sliced)
  • 1/2 cup diced scallions
  • 1/2 cup grated cotija cheese (divided)
  • 5 eggs
  • 1 cup milk
  • 2 tablespoons all-purpose flour
  • Seasonings: oregano, sugar, ground coriander, nutmeg, salt, pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prepare the pie crust by mixing flour and salt, cutting in butter, adding ice water to form dough. Roll out and fit into a pie dish.
  3. In a skillet, sauté poblano peppers in vegetable oil until tender; add corn and scallions until heated through.
  4. In a bowl, whisk together eggs, milk, flour, and seasonings; stir in sautéed vegetables and half of the cotija cheese.
  5. Pour filling into the crust; sprinkle with remaining cotija if desired.
