  • 4 portobello mushroom caps
  • 2 tbsp balsamic vinegar
  • 1 tbsp low sodium soy sauce
  • 1 tbsp olive oil
  • 1 tbsp chopped rosemary
  • 11/2 tsp steak seasoning
  • 4 oz reduced fat Swiss cheese
  • Whole wheat low-calorie buns
  • Fresh vegetables (red onion, tomato, avocado)

Instructions

  1. In a mixing bowl, whisk together balsamic vinegar, soy sauce, olive oil, rosemary, and steak seasoning.
  2. Marinate the portobello caps in the mixture for 20-30 minutes.
  3. Preheat your grill to medium heat and lightly oil the grate.
  4. Grill the marinated mushrooms for 5-7 minutes on each side while basting with reserved marinade.
  5. Add Swiss cheese on top of mushrooms during the last minute to melt.
  6. Grill red onion slices for about 1 minute per side and toast the buns until golden brown.
  7. Assemble the burger with spinach, grilled mushrooms, onions, tomatoes, and avocado on whole wheat buns.
