  • 1/2 cup dry quinoa
  • 3/4 cup water
  • 23 cups chopped tomatoes
  • 15 oz can chickpeas (drained and rinsed)
  • 1/4 cup green onions (chopped)
  • 1/4 cup fresh lime juice
  • 2 tbsp avocado oil
  • 1 clove garlic (minced)
  • Fresh parsley (to taste)
  • Ground cumin
  • Sea salt
  • Pepper

Instructions

  1. Rinse quinoa under cold water using a mesh strainer.
  2. In a small pot over medium heat, lightly toast the quinoa for a few minutes.
  3. Add water and bring to a boil; reduce heat and simmer covered for 12-13 minutes until fluffy.
  4. Meanwhile, chop tomatoes, green onions, and parsley.
  5. Whisk together lime juice, avocado oil, minced garlic, cumin, salt, and pepper for the dressing.
  6. Once quinoa is cooked and cooled slightly, combine with tomatoes, chickpeas, green onions, and parsley; toss with half the dressing.
  7. Serve chilled or at room temperature.
