  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda

  • 2 cups shredded zucchini
  • For Frosting: 6 tablespoons cocoa powder
  • 1/4 cup butter
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, mix vegetable oil, sugar, and vanilla until well blended.
  3. In another bowl, combine flour, cocoa powder, baking soda, and salt; stir into wet ingredients.
  4. Squeeze excess moisture from shredded zucchini if necessary; fold into batter.
  5. Spread evenly in the prepared pan and bake for about 25–30 minutes.
  6. For frosting: Melt cocoa powder and butter together; mix with powdered sugar and milk until smooth.
  7. Once brownies are cool, spread frosting on top before cutting into squares.
